Smothered Beef Burritos 🌯 aka Wet Burritos
And a few NOT smothered/wet 😉 that sauce was HOT…spicy 🌶
I cooked the beef in slow cooker, for the first time 😉 I’ve always made it in cast iron Dutch oven. Plus…I added enchilada sauce to slow cooker; I had homemade in my freezer, but canned would work. I added seasoning…like S&P, onion powder, garlic powder, smoke powder, adobo, green chile, red chile on meat. Sear meat first, then add beef and enchilada sauce to slow cooker; mine was so spicy…I tried taming it down with a little beef broth…didn’t work 🤭🥵 just have a tall glass of milk with dinner…or sour cream with burrito. 😜 Cook on high for 4 – 5 hours or low 6 – 8; when beef falls apart with tongs.
When beef is done, shred with 2 forks. Heat refried beans in saucepan. Have a couple cups of your favorite cheese ready, like Mexican blend or cheddar, jack, etc..
Mise en place. Like an assembly line… have flour tortillas, beef, refried beans, cheese and sauce all near. I did add a slurry to my sauce to make it slightly thicker consistency. Spread refried beans in center of tortilla, then beef, then cheese and roll, tucking ends in as you go. Place seam side down in 9×13 baking dish. Continue with more until pan is full. Then ladle sauce over burritos. Sprinkle cheese on top.. I used remainder for burritos without sauce and placed them in 8×8 dish 🤷♀️ I didn’t really need to do that part, you could stick them individually in microwave for 7 – 10 seconds. I was using the oven anyway so warmed others that way. Leave in oven until cheese is melted and bubbly; desired doneness, about 20 minutes at 350°. I never did look at a clock, I just looked in oven 🤣 Well! It works for me. As long as I’m not too busy, otherwise I’d set alarm for 20 minutes…to not forget.
