
Easy pan fried fish. In this case, Walleye. Fresh water fish. 😋 No recipe is needed, really. I did soak raw fillets, that I cut to individual size servings, in salt water, for an hour or two 🤷♀️🤭 I boiled little yukon gold like potatoes for about 20-30 minutes, or when easily pierced with a fork. I used butter and a little evoo on foil lined baking sheet. After draining potatoes and allowing them to dry well. Then I slightly smashed them with either a potato masher or fork. Then drizzled a little butter and evoo on them. Then seasoning; salt, pepper, garlic powder, minced garlic, and pinches of grated parmesan cheese. Put that in 450° oven (mine is countertop convection oven) for 45-55 minutes or until desired browning or crispness. When potatoes were halfway done, down to about 25 minutes, I added our favorite mixed vegetables, tossed in evoo, salt, pepper, and garlic (both kinds again; we like garlic) in a small baking dish. While that was cooking, I took fish out, rinsed, and patted dry really well, repeating with more paper towels to get as dry as possible. Then I seasoned fish with salt (Redmond Real Salt), a hint of pepper, and garlic powder. Use your favorite seasoning. Then I got out two bowls, one with milk, one with WELL SEASONED flour. I dipped fillets in milk, then coated in flour well, set aside on platter.When I had 8-10 minutes left on the oven (I usually burn a few minutes getting ready) because fish is quick, only needing about 5 minutes total, depending again on thickness of your fish. This walleye wasn’t thick. So 2-3 minutes per side, in a very hot nonstick pan with a little healthy oil (with high smoke pount). My best option this day was beef tallow. Fry 2- 3 minutes, flip and fry another 2- 3 minutes, transfer to paper towel lined plate. Everything got done at the same time. It was all delicious!
