Food, Recipes, Cooking & Eating for a Week

Spinach, Arugala, Romaine salad, with cherry tomatoes, red cabbage, fried onion crisps ( & beets on mine 😉) 🥗

I’ve been going to the farmer’s market 🥰

BBQ Ribs in pressure cooker (timing guide at link), then broiler with favorite BBQ sauce; ours is Stubb’s Sticky Sweet Barbecue Sauce. Roasted Asparagus w/evoo, salt, pepper, herbs & garlic 425° for 20-25 minutes. Honey roasted sweet potatoes & leftover broccoli salad.

My daughter said she likes it charred, so she got it 😜

Along with good bread and butter; this time was Rodolphe Le Meunier butter 🧈

Stuffed Cabbage Rolls , except I didn’t have canned condensed tomato soup 🙃 so I made my own sauce, making it as close as I could to tasting like Campbell’s & it turned out really good! It should be a thin sauce for this. I couldn’t resist adding some good balsamic vinegar 😋 delish!

I’ve been making this for 50 years and grew up eating it. Very close to the same way. Here  ➡️   https://just2note.com/2023/12/08/stuffed-cabbage-rolls/  & here ⤵️ https://dawns-ad-lib.com/2020/08/08/stuffed-cabbage-rolls/   … I still like to look at recipes, plus I liked the sound of original old school Slovak way 😉 I grew up with using home canned tomatoes 🍅 😍 That was in Michigan, where my mother canned them and I canned a lot! They don’t grow tomatoes like that in the desert 🫠 But you figure out how to “make it work.” Get the best tomatoes you can (fresh and canned), along with a pinch of sugar, seasoning, etc., whatever it takes, TASTE.

Example of lunch ⤵️

Egg in a basket or egg and toast with garlic roasted broccoli 🍳🥦 😋

Fried cabbage with kielbasa – browned sausage and set aside, sautéed sliced onions, added about 1/4 – 1/2 cup of broth (depending on how much you have. I used vegetable broth), a dab of Dijon mustard 🤷‍♀️ (I ran across that in a recipe somewhere) 🤔, pepper, some chili crisp (we like spicy) and with wooden spoon I got whatever flavor stuck on bottom, added chopped/sliced cabbage and put kielbasa back in, stirred good, covered and let cook until cabbage was done. Might have been 20 minutes. Stirring a couple of times during cooking. When the liquid cooks out, the cabbage will fry or sauté, stir until it’s to your liking.

Also made linguini with meat sauce, red gravy 😜 🍝 it’s what pasta I had.

Linguini with meat sauce or bolognese

And Grana Padano I got from Murray’s Cheese Shop 🧀 😋

Topped with cheese, & w/good bread and butter 😋
Just as good for lunch the next day 😋

My granddaughter chose Brussel sprouts and broccoli 🥦 as a side to take to her school potluck. So I cleaned, trimmed, cut veggies, tossed in evoo, salt, pepper, garlic powder, and an herb seasoning. I separated them into baking pan in case anyone didn’t like one or the other. I added bacon on top of sprouts. 425° for about 20-25 minutes (I use a convection oven) Grated grana padano over all after it was done. 🧀 They liked it AND turned out to be the right choice, with dishes others brought; the only vegetables and something green 💚 😀

Grilled beer brats (they came made in beer already). I thought I got them too charred, but then my family all grabbed the most charred ones first! 🙃 and I thought I’d be the only one going with no bun; noooo… everyone else chose no bun also 😵‍💫 I made air fryer onion rings and roasted asparagus to go with brats, and bbq sauce for me.

crispy oven baked chicken thighs with roasted Brussel sprouts, bread and butter; this time, creamy grass fed cultured British Butter 🧈 😋

Sometimes I otder out or make something super easy, like stuff from Trader Joe’s. Like this Shiitake Mushroom Chicken stir fry with rice ⤵️

My daughter surprises me with Trader Joe’s finds 😍🤞🤭 They’ve been good; smaller than what I’d make homemade, but it works.

More salads, eggs, and bacon thrown in through the week & … that’s all folks 🐷

🤣

Or a delicious refreshing cucumber 🥒 and tomato 🍅  salad 🥗

My daughter and I LOVE this Garlic Expressions It’s delicious 😋 on anything‼️
