I usually make taco salad a day or two after tacos, using reheated leftover seasoned meat and fresh toppings, especially lettuce 🥬🍅 also…sour cream, salsa, jalapeño, your favorite cheese; we usually use mild cheddar (sometimes sharp 😉) , but would be good with Monterrey Jack, Colby cheese, Mexican cheese blend, Queso fresco, Queso añejo, Cotija, Queso de Oaxaca, Crema, and/or Chihuahua cheese (farm chihuahua Mexico, like a mild cheddar), or colby-jack.
