
I don’t know what else to call it π€ I started out following a recipe but ended up adding cuban flavors to it. π€·ββοΈ Maybe Mojo Shredded Beef? I’ve changed to using my pressure cooker, to sear, then PC, before transferring to my slow cooker. The PC has a slow cooker in it also. However, I like the height and shape of the original slow cooker more for serving; I leave it on warm, and whoever shows up can eat even they want.
First, I sear well seasoned beef roast in a little coconut oil in Ninja Foodi PC. Switch to PC, throw in flavors you want
β‘οΈ juice of orange π, lime, guajillo pepper, ancho chile, hatch chile, abobo pepper πΆ, garlic, onion, cumin, garlic powder, onion powder, oregano, chili powder, sprinkle of dark brown sugar, salt & pepper π€
on high for 45 minutes, depending on size of roast. Transfer to slow cooker, shred with 2 forks, strain liquid from PC over meat, taste & adjust if necessary.






NOTE to self:

Seared well seasoned beef in Ninja foodi multi cooker. Then addedΒ 1 1/2 cups beef broth, guajillo pepper, pasilla ancho chile pod, 2 arbo chile pods, chipotle chile with adobo sauce, juice 1 orange, juice 1 lime, couple tbs brown sugar (or to taste), half an onion, 3-4 garlic cloves; seasonings: Redmond Real Salt, pepper, chili powder, chipotle powder, garlic powder, onion powder, McCormick Herb Garlic Salt and Pepper seasoning, cumin; pressure cooked 1 hrs and 45 minutes. Shredded beef, put in slow cooker. Put contents from pressure cooker in blender, blending well. Strain into slow cooker over beef. Taste for seasoning. I added more chipotle powder, brown sugar, and McCormick seasoning, to taste (with my daughter’s assistance π). Allow flavors to heat/blend/cook together for a little bit π until I couldn’t wait π€ We like it on little street flour tortillas. Leftovers for either more tacos, nachos, etc…
