Being in Arizona, we’re lucky to have a lot of carnicerías around us…a LOT; meaning we can get it already marinated or have it put in a marinade. And the marinade at our favorite store is off the charts! Damn delicious 😋 Most of them are. If you don’t have that available, there are lots of mojo marinade recipes online. I’ve made my own before, and still do for slow cooker roasts, but they’ve got it DOWN. 👍
I served it with salsa verde, salsa roja, cotija cheese, & lime for toppings, and Mexican rice & refried beans for sides; that I also got from same store.
