Longboy Cheeseburgers
I’ve posted this before, but we’ve made small changes. We use hoagie rolls. 1 & 1/2 lbs ground beef. Less filler, like heavy cream or evaporated milk, and cornflake crumbs. We use a ‘good’ American cheese 🧀 I shouldn’t have to say that, but I tasted bad generic cheese once and learned theyre NOT all good 😳 That hasn’t slipped from my memory 😖 Make it your way 😜 Basically, it’s an open-face cheeseburger. That means you don’t have to use any filler if you don’t want it. Add ketchup, mustard & pickles (onion) on meat under cheese if you like. Jalapeños? 🌶 I was out of ketchup, so I made my own. Recipe for ketchup below.

Ingredients

• 1 pound lean ground beef
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 tablespoon Worcestershire sauce
• 1/4 cup ketchup
• 1/4 cup chopped onion
• 1/2 cup crushed cornflakes
• 1/2 cup heavy whipping cream
• 2 loaves brown ‘n’ serve French bread
• 1 cup (4 ounces) shredded cheddar cheese

Directions

  1. In a 2-quart bowl, mix together first eight ingredients. Cut each loaf of bread in half lengthwise; spread one-half of meat mixture over each half, covering all the way to edges. Place on baking sheet.
  2. Bake at 350° for about 25 minutes or until meat is cooked, sprinkling with cheese during the last 5 minutes of baking. Cut into slices to serve. If using hoagie rolls, you won’t need to slice. And you can eat as is or add toppings.

Homemade Ketchup
INGREDIENTS
1 small can tomato paste w/enough water to make 1 cup
2 tablespoons light brown sugar (okay, I used more)
2 teaspoons apple cider vinegar
1 teaspoon salt
Pinch of pepper
Dash garlic powder
Dash onion powder
1-2 teaspoons honey mustard (optional)
Pinch cayenne if you want spicy ketchup (optional)
INSTRUCTIONS
Put all ingredients into a small saucepan, bring just to low bubbling, stirring occasionally, reduce heat to medium/low and let cook for 10 minutes. Remove from heat allow to cool for 5 minutes, then either use immersion blender, put in a blender or food processor and process until it is smooth in consistency.
Then use in recipe, put in a container to serve, or put in refrigerator for storage.

Confession: I made grilled cheese yesterday and cheeseburgers today. That’s because American cheese from local deli was on sale 😆 Now I’ll freeze the rest.
