Oven Baked Chicken and Rice – RecipeTin Eats

So yeah, I make this often. ➡️ My usual recipe. My family loves it; except for two, 🙄 but… this is one occasion I don’t care 🤭 because I love it 😋 I’ve also posted it more than once, however… I’m trying someone else’s recipe this time. It’s darn near close to the same, but curiosity 🤔🙀 This one is adapted from Recipe Tin Eats. The only thing I did differently was that I did dirty a sauté pan and did onions, peppers, and garlic in that, then transferred to roasting pan. Then I lightly toasted the rice (extra long basmati rice) in the same sauté pan. Transferred rice to roasting pan. Then I browned chicken real quick on each side and put that on top of rice. Lastly, I added chicken broth; all chicken broth, no water. My seasoning was a little different, too. I used a new roasted garlic and herb seasoning. Recipe (& nice food blog!) at link below ⤵️

Made a salad to go with it 🥗 we love the little dried beets 😋

We usually use romaine &/or spinach, but iceberg is what I had, so “make it work.”

Almost done. Removed foil from top and about another 15-20 minutes. Then taadaa! YUM 😋

This recipe worked out good 😉👌 For some reason, I cook extra long basmati rice better than other rice 🤷‍♀️ 🍚 🌾
