
Buffalo Chicken Bites – adapted from ➡️ Garlic Butter Chicken Bites AND I made that into ➡️ Buffalo Chicken Salad 🥗
EASY. DELICIOUS. 😋
I didn’t follow a recipe. So I nabbed this one for anyone who wants that. I did double this. ⤵️
Insanely Good – Let’s Eat
Note: I fried chicken bites outdoors on induction burner, in hexclad wok (only because I LOVE that pan!) with 1/4 cup of beef tallow. Transferring to a large stainless steel bowl. Took inside.
In a saucepan, I heated a stick of butter (although you can see in my photo, at bottom of bowl, that much isn’t really needed 🫠), with a couple cloves of minced garlic and about a cup of Frank’s Hot Sauce. The garlic is optional. My family wants garlic in everything 🤣 🧄 Whisk until well blended. Then pour hot sauce butter over chicken. Serve with ranch dressing, salad, and celery sticks. My son likes blue cheese 🧀 🤭 They all like ranch.
Ingredients
• 1 1⁄2 lbs boneless skinless chicken breasts (3-4 large breasts)
• 1⁄2 cup all-purpose flour
• 1 teaspoon kosher salt
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1⁄2 teaspoon black pepper
• 1⁄4 cup olive oil
• 2 tablespoons unsalted butter
• 1⁄2 cup Frank’s RedHot Original (Hot Sauce)
Instructions
• Cut the chicken into bite-sized nuggets and pat dry with paper towels.
• In a large bowl, mix the flour, salt, garlic powder, onion powder, and black pepper. Add the chicken pieces and toss to coat evenly.
• Warm the olive oil in a large skillet over medium-high heat. Working in batches, add the coated chicken pieces in a single layer. Cook for 3-4 minutes per side until golden brown and cooked through. Transfer to a plate.
• Add the butter and hot sauce to the skillet, stirring until the butter melts and the sauce looks smooth.
• Add the chicken back to the skillet and cook for 1-2 minutes, until the sauce is bubbly and the chicken is done.
• Serve the buffalo chicken bites immediately with celery sticks and ranch or blue cheese dressing for dipping. Enjoy!
Classic Hidden Valley Ranch Dressing with Mayo – two versions on website ⤵️
Ingredients:
– 1 cup mayonnaise
– 1 cup buttermilk
– 1 tablespoon Hidden Valley Ranch seasoning mix
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon black pepper
– 1/4 teaspoon salt
Instructions:
1. In a mixing bowl, whisk together the mayonnaise, buttermilk, Hidden Valley Ranch seasoning mix, garlic powder, onion powder, black pepper, and salt.
2. Adjust the seasoning to taste, adding more seasoning mix or salt if desired.
3. Transfer the dressing to a jar or container with a tight-fitting lid and refrigerate for at least 1 hour before serving.
4. Enjoy your homemade Hidden Valley Ranch dressing with mayo on salads, as a dip for vegetables, or as a topping for sandwiches.
