Blood Orange Sweet Potatoes

They’reΒ  growing right outside, I need to use them. πŸ˜‰ 🍊🌳 So I tried blood orange over sweet potatoes, and it was damn delicious 🍠 πŸ˜‹

I peeled and cut sweet potatoes in a couple of inch pieces. Tossed with evoo, Redmond Real Salt, and fresh cracked black pepper in baking dish. Next, I drizzled honey over it. Then I spotted that orange in the fruit bowl on my counter πŸ€” I thought, “It can’t hurt.” So I squeezed juice over potatoes. Roasted in 425Β° oven for 25-30 minutes. I made this as a side to go with Grilled Mojo Chicken thighs, which also contains a little orange juice; that works. I started the marinated chicken an hour before dinner, using recipe at link (325Β° oven 55 minutes before grilling). That way, all I had to do was throw it on grill a few minutes. Tossed a little iceberg salad together, and that was good. It was only two of us anyway. Now my daughter will have some for lunch at work tomorrow. She likes heavy charring. She got it πŸ˜† The potatoes got done sooner than chicken, so I turned oven down to 180Β° and left it in warm oven while I finished grilling.
