Cheesy Shaved Steak Stuffed Potatoes

● Russet Potatoes ● olive oil ● salt ______ ⤵️ ● shaved steak ● shredded cheddar cheese (or similar) ● sour cream ● green onions, chopped.   ________________________  ⤵️         ● seasonings (salt, pepper, garlic powder, onion powder, worchestershire sauce)

Wash russet potatoes, pat dry. Poke 4 holes in each potato. Smear or brush potatoes with olive oil (or avocado oil, coconut oil, tallow), sprinkle with sea salt. Bake at 400° for 55 minutes or when fork tender. While the potatoes bake, sear seasoned shaved steak on high heat, set aside. Let potatoes cool a few minutes. Cut a slice across the top of each potato. And a little cut crossing over first slice, making a cross ✝️ sort of 🤭, squeeze potato from ends, toward center until potato opens and potato pops up. Scoop out a couple of tablespoons from each potato, leaving skin intact. Add a pat of butter, salt, and pepper to each potato, top with seared shaved steak, then top with cheese. Put under broiler for a couple minutes or when cheese is melted. 🫠  Top with chopped green onions and a dollop of sour cream.
