Kielbasa and Potatoes with Brussel Sprouts Salad

Easy meal! And delicious 😋

I first partially cooked potatoes in the microwave. I had 4 Yukon Gold potatoes that I microwaved for 7 minutes. Took them out and set aside to allow to cool enough to handle. Meanwhile, I cut up Kielbasa sausage in serving size pieces. Because my son doesn’t like bbq sauce 😮 But my daughter LOVES it, I split the sausage equally to each side of roasting pan, after tossing half with a little evoo, the other half in our favorite bbq sauce. I put potatoes in the middle, after tossing in evoo, our favorite seasoning and adding onion. Baked at 425° for 30 minutes or to desired browning. 🤭 in our case, we like charred edges.

Served with a Brussel sprouts and apple salad. It’s similar to broccoli salad, but with shredded sprouts, red cabbage, dried cranberries, and apple. Delish 😍
