Foil Packet Dinner

I didn’t use a recipe, but here’s one that’s close enough šŸ˜‰ they’re very versatile. I chose the oven today. 425°, 25 minutes. Recipe at the Kitchn Sausage & Potato Foil Packets

INGREDIENTS

  • 12Ā ouncesĀ smoked sausage, such as andouille or kielbasa, cut into 1-inch pieces
  • 1 1/2Ā poundsĀ baby Yukon gold potatoes, quartered
  • 8Ā ouncesĀ green beans, trimmed and halved
  • 1Ā tablespoonĀ Cajun seasoning
  • 2Ā tablespoonsĀ unsalted butter, melted and cooled

INSTRUCTIONS

  1. Heat an outdoor grill to medium-high heat. Prepare 4 (8×8-inch) sheets of heavy-duty aluminum foil and set aside. Ā 
  2. Place the sausages, baby potatoes, and green beans in a large bowl. Add the Cajun seasoning and butter and toss to coat everything in the spicy, buttery goodness.
  3. Divide the potato and green bean mixture between the 4 pieces of foil. Fold each piece of foil up into a tight packet that is completely sealed — fold 2 opposing sides together and then crimp the edges closed.
  4. Place the packets on the grill. Cover and grill until the potatoes are tender, about 25 minutes. Use caution when opening the packets, as they are quite steamy.

Oven cooking: These packets can also be baked in a 425°F oven for 20 to 25 minutes.
