Recipe 👉 Chicken Cacciatore – dawns-ad-lib.com®

My dad’s recipe 😉 We always serve ours with pasta, and because it’s what I grew up with, then raised my kids on… we’re stuck on mostaccioli or smooth penne. My first post of this dish 🤭 ⤵️ https://dawns-ad-lib.com/2013/09/08/simple-chicken-cacciatore/
Ingredients –
Sauce –
Mushrooms, sliced and minced garlic 😉
2 6oz or 1 large can tomato paste
1 46oz can/bottle tomato juice
1 tsp Italian seasoning
1 tsp basil
1 tsp oregano
1 (tomato paste) can of water
Chicken – preferred parts, we’ve always mixed white meat and dark meat
Pasta –
Preference; we like mostaccioli or penne
Directions –
In a Dutch oven or large pot brown/sear chicken in a little olive oil (or a healthy oil). Remove chicken to a plate and set aside. Drain most oil. Sauté mushrooms, add garlic, and cook for a minute longer. Add tomato juice, tomato paste, spices, garlic, and water. Simmer chicken in sauce until chicken is done, approx 90 minutes.
Prepare pasta as directed on package, drain. Add some of the sauce to pasta, enough to thoroughly coat.
Serve chicken and sauce over (or next to) pasta, top with Parmigiano-Reggiano, grana padano, or favorite Italian hard grated cheese 🧀 i.e., asiago, Pecorino Romano 😋
Because I grow my own, I also add a little fresh oregano and basil to sauce. I also add a little chiffonade of basil on top at serving, along with cheese; optional


When/if I can’t get to a local Italian grocer, I like De Cecco, a low and slow air-dried pasta.
