Caesar Green Bean Salad

I did this the easy way for a busy time, Thanksgiving 😳 Damn Delicious 😋

Blanche fresh trimmed green beans in a big pot of boiling salted water, for 2-5 minutes; usually 2-3, but I tasted until it was tender yet snappy to our liking 😉 Drain and put in ice water. Drained again, poured into serving dish, added sea salt (I would prefer Celtic Sea Salt, but ran out; had himalayan pink salt) and fresh cracked black pepper, tossed. Then, I added my favorite Caesar dressing; I thought about making my own, but I was stuck home alone, so I ordered grocery delivery from Whole Foods Market & I didn’t want to get into each ingredient, like anchovies, etc.. 🙄, tossed until beans were well coated. Added shaved Parmigiano-Reggiano, Asiago, and Romano. I know Caesar salads usually just have parm, which is still good, but I LOVE Asiago also! Love Italian cheeses 🧀 So it is what it is. Just like the fact that I also added pomegranate arils/seeds.. for a touch of festive color. Added croutons just before serving, so they stay crispy. It really is tasty. I am personally tired (been so) of the Green Bean casserole; even last time, I did a Green Bean with fennel that was good. I decided on “salad” because it’s not only delicious and refreshing, but it also serves at room temperature. And healthy.

I’ve always popped pomegranate seeds out myself; this is the first time I’ve tried already prepared. Well! I previously had a pomegranate tree 🌳 That was easier.
Back up cheese 🧀 and we never have too much cheese 😍

Oh by the way, I just discovered this Garlic Everything Sauce! Merci! That stuff is good. I almost went with that, but I resisted. Yeah, that stuff is good on anything!
