I’ve made a couple/few changes, like lime (or lemon) juice instead of vinegar & a little orange juice, up the garlic (I use ground AND freshly minced) & seasonings; cumin, adobo seasoning (the Spice House), Mexican oregano, onion powder, chili powder, smoked paprika, celtic sea salt & fresh cracked black pepper 🤔 don’t forget a little brown sugar. I use coconut oil instead of olive oil. I use my pressure cooker, searing seasoned beef first, then pc, where I add all the other ingredients, on high for 55 minutes (yes, falls apart 😉); I don’t even need to use 2 forks, the tongs work, AFTER I transfer it to my regular slow cooker (I like the size, depth better, so yes, I dirty both, but they’re easy to clean) & strain the juices from PC, over the meat in slow cooker. That way I can leave it on warm for a LONG time; everyone can eat when they get here or when they feel like it 😜 all that being said, the recipe at link is delicious as is, choices. Onto the Pico ⤵️


Easy! This recipe is from my food city (where we actually do get many of our ingredients), except, of course 😆, I make little changes; this is one recipe you can adapt flavors to your preferences; like more or less spicy, I used serrano chile, but if you don’t like spicy you can leave the chile out altogether. And more or less cilantro, TASTE & adjust salt &/or lemon 🍋 (lime) juice.
Pico-de-Gallo
Homemade Pico de Gallo is so quick and easy to make that there is no excuse for buying the prepackaged store-bought variety! It will keep well in the refrigerator for several days and is great for jazzing up eggs, tacos or just enjoy it with tortilla chips
Ingredients
- 6 Tomatoes
- 1 Onion
- 1 Bunches of Cilantro
- 2 Fresh Jalapenos
- 3 Canned Jalapenos (La Costena)
- 3 oz Juice from the Canned Jalapenos
- 3 Fresh Lemons or 3oz Lemon Juice Concentrate
- Salt to Taste
Instructions
- Chop Tomatoes in to ¼ inch pieces
- Finely Chop Onions
- Trim Stems from Cilantro and chop
- Chop both types of Jalapenos
- Combine chopped ingredients with the juices of the Lemon and the Jalapenos and mix together adding salt to suit your taste

A little street taco (or 2…3 🤭) and some fresh fruit is good enough for me… more than “good enough”, it’s damn delicious 🌮 😋🍍🍉🌮
