
I usually make a lot more mashed potatoes, but I was trying to downsize for 3 people; I’m used to 5. It was enough for us 😋
Ingredients
- 3-4 servings mashed potatoes
- 1/2 medium onion, diced
- 1-2 cups vegetables (diced) e.g., carrots, corn, peas, green beans, any or all combos
- 1 1/2 pounds ground beef
- 1/2 cup beef broth
- 1 teaspoon Worcestershire sauce
- Salt, pepper, other seasonings of choice
Sauté vegetables:
While the potatoes are cooking, sauté onions in butter for 5 minutes. Brown ground beef with seasonings, then set aside in bowl/plate. Add vegetables to same sauté pan for their cooking time, with a little broth, Worcestershire sauce and seasonings; taste as you go. “I” do my vegetables and ground beef separately in same pan 🤷♀️ it doesn’t really matter, just your preference. Finish mashed potatoes; layer vegetables, beef, then mashed potatoes in baking dish; optional you can run fork over potatoes to give it peaks to brown. Top with parmesan cheese. Bake (ninja foodi oven) at 425° until desired browning on top. Approximately 20 minutes 🤔 Delicious 😋
