
Pulled pork egg rolls with birria, red salsa (slow burn), or salsa verde (avocado cucumber salsa), and/or sour cream for dipping 😋 This was delicious. I used leftover pork from when we used a pork shoulder to make a pork birria; yeah, we made that a thing. I strained the meat, heated pork, and birria, separately. Placed egg roll at angle, placed pork closest to me, sprinkled some diced red onion on top, folded closest point over, folded side ends up, tapped a little egg wash on furthest point and rolled. Then fried until golden and crispy. That worked out REALLY GOOD 👌
