Tex-Mex Wet Beef Burritos

I am using leftover beef barbacoa. However, you can make shredded beef first in slow cooker or pressure cooker. I always use a pressure cooker nowadays. Just make sure to season well. Add chilies, onion, garlic, S&P, chili powder, etc..Taste for seasoning adjustment. Beans in burritos are optional. Also, I added cooked/softened chile pods, onion, tomato, and garlic to a blender with a little broth, added that to gravy. My family loves chiles 😍🌶

Shred beef with two forks. Set aside. Make chili gravy ⤵️

Tex-Mex Chili Gravy
Most chili gravy recipes do not use taco or red enchilada sauce, but it’s how my family likes it.
Ingredients
• 1/4 cup bacon fat or beef tallow
• 1/4 cup all-purpose flour
• 2 cups beef broth
• 2 tbsp. chili powder
• 2 tsp. ground cumin
• 1 tsp. garlic powder
• 1 tsp. onion powder
• 1/2 tsp. kosher salt
• 1/2 tsp. black pepper
• 1/2 tsp. Mexican oregano
• 1 8-12 ounce jar LA VICTORIA® Red Taco Sauce (or similar smooth sauce)

Instructions
• Heat the oil over medium-high heat, then add the flour whisking constantly until it turns the color of peanut butter. About 5 minutes.
• Add stock, whisking constantly, then add the seasonings and taco sauce. Whisk until smooth and starting to thicken.
• Reduce the heat to low and simmer for 10 minutes. Add more beef stock, if necessary, to maintain a gravy-like consistency.
Note: if too thin, add more (couple tbsp) flour by mixing flour and water in a jar first. Shake 🫥 and stir into gravy. Allow to thicken on heat.
Taco sauce can be substituted with red enchilada sauce or tomato sauce. If I used tomato sauce, I’d season it first, with basic seasoning, chili powder, and a pinch of sugar to balance out tin (can) taste.

For Beef and Bean Burritos… Heat refried beans in a small saucepan. Leave on low. We get really good homemade refried beans from local carniceria. Optional

Using Burrito 🌯 size flour tortillas, spread refried beans in center of tortilla, then beef, followed with cheese. I’ve made it without cheese inside, just on top. Personal preferences. Or if you don’t have enough cheese. They’re good either way. We also like green chilies in these. Again, optional. That’s swinging by New Mexico 😆 So from near border in Arizona, swinging through Texas, then New Mexico, and back 🤭 Line burritos, seam side down, in baking dish that has a chili gravy smeared on bottom. Repeat until baking dish is full, or you’ve used all ingredients. Ladle chili gravy over burritos. Top with cheese. Heat in 350° oven until cheese is bubbly. We like it to start browning on edges. About 20 minutes. Serve with sour cream, favorite salsa, chopped green onions, or any favorite Mexican food style toppings.

The local carniceria did not have La Victoria Taco Sauce, so I got this one. Only used half of it.

I topped with a little bit of chopped green onion and red onion. 🎨 🖌 🤭

I had extra sauce/gravy leftover, so I put it in the freezer. I’m always so glad when I have something in the freezer to make cooking easier. Last time I made chili, I made a large pot for that reason 😉 🌶

You can serve it beside fresh vegetables, like chopped lettuce, tomato, etc., or serve it smothered, swimming 🏊‍♀️ 😆 ⤵️
