Potato Salad

Classic Potato Salad – this time with celery, red onion, and hard-boiled eggs ๐Ÿ˜‹

A simple basic version –

Ingredients:
6 potatoes (mine were small) ๐Ÿฅ”
5 eggs (we love hard cooked eggs) ๐Ÿฅš
2 celery stalks, chopped ๐Ÿฅฌ
1/2 red onion, diced ๐Ÿง…

Dressing:
โ€ข 1 cup Miracle Whip Salad Dressing (or if you’re a NO on that, mayo works ๐Ÿ˜‰ I’d up the sugar & seasonings to TASTE)
โ€ข 1 Tsp apple cider vinegar
โ€ข 1 Tbsp Dijon mustard
โ€ข Salt & pepper (I don’t measure that. Taste throughout. Potatoes can take a lot of salt and pepper)
I love Redmond Real Salt and fresh cracked black pepper

Wash and quarter potatoes (optional, it cooks faster). Put in a pot of cold salted water. Bring to boil and cook for 15-20 minutes, or when tender to a fork. Drain, rinse in cold water, and allow it to cool. Put eggs in a pot of cold water. Bring to a boil. As soon as eggs start to dance around, turn burner off, cover with lid, and wait 17 minutes. That’s for our preferred doneness. Perfectly “hard” boiled. If you like them softer in the center, you can cut back a minute or 2). No peeking. Drain and add cold water (I add ice) to cool. Chop and dice celery and onion. Cube potatoes in bite-size pieces. Chop eggs. I always save a few slices for topping salad. Note image.
In a large mixing bowl, put potatoes, veggies, eggs, salt, and pepper. Mix carefully but well. In smaller bowl mix dressing ingredients and add to potatoes. Stir, again, carefully, but well. Fold I suppose would be the word ๐Ÿคญ TASTE for seasoning adjustment.
Other ingredients go good in this, depending on what your family likes and what’s available. Like radishes, a lot of people seem to like relish or pickle ๐Ÿ˜ฌ. My mother-in-law always put chopped green peppers in hers. I’ve added green olives ๐Ÿซ’ Black olives would work too, if you like them. Green onions, too. I kept it simple this time. It’s delicious just like that, too! Transfer to a bowl that has a lid for storing in the refrigerator. Or cover with plastic wrap. If you want to make it look more pleasing to the eyes, add egg slices on top and sprinkle with a little paprika.
