Pork Chops in Mushroom and Onion Gravy

I’ve posted this gravy previously, but with beef. This time, I used pork chops, so also vegetable broth instead of beef. However, any would taste good. 😋 Also, this is the first time I used 3 different kinds of mushrooms 🍄 shitake, cremini, and white button.  I’ll leave three different links; one to previous smothered pork chops post, one with the mushroom onion gravy, and another to a recipe from a different blogger.

Smothered Pork Chops Recipe – Chef Billy Parisi

Sear seasoned pork chops 3-4 minutes per side in hot skillet with a couple tablespoons of healthy oil. Set aside.

In same skillet, caramelize onions and mushrooms.

Add a couple of tablespoons of butter and oil, then stir in 1/4 cup of flour. Cook for a minute. Add salt and pepper. Stir in a couple of cups of broth and heavy cream to desired consistency. Check seasoning, and add worchestershire sauce. Put pork chops back into gravy and continue cooking until pork chops reach an internal temperature of 140° – 145°.

Serve with mashed potatoes (rice or noodles) and a vegetable. I made Brussel sprouts with balsamic vinegar 😋
