
Or a spin on Chicken Caesar Salad š„ š

Easy. You don’t really need a recipe. First, I made a nice fresh salad with romaine lettuce, 1 tomato (only because I had to use up the tomato; I got a new farm box delivery today with fresh new produce). Thinly sliced red onion. We never have croutons, so the tomato and lack of croutons made it not exactly a Caesar salad…Ā I suppose. š I sprinkled salad with our favorite seasoning. McCormick Herb, Garlic, Salt and pepper. Tossed, topped with a little shredded parm and Romano, set aside.

I cut chicken breasts in half to make them thinner. I did not pound them. Also, I did not use any kind of steps for dredging them. I simply seasoned (Redmond Real Salt, fresh cracked black pepper, and McCormick Herb Garlic Salt and Pepper seasoning) on both sides of each chicken breast and the same seasoning in a mix of 1/2 cup flour, 1/2 cup panko breadcrumbs in a wide bowl. I simply placed each piece of chicken on flour mix and patted to get it to stick. Repeat on both sides, and transfer to a platter. Heat healthy oil. I used a mix of tallow and avocado oil; actually, I drizzled a little olive oil in too š« š just because they were right there staring at me from oil dispensers š¤ Any will work. Even bacon fat… if that’s all you have. Better than seed oils. Just sayin’. I heated oil on medium high, when HOT, fried chicken until golden crispy on outside, and internal temperature was 165°. I had to do it in 2 batches. I used a smaller skillet. Transfer to paper towel lined platter. I sliced each chicken breast in slices; pictured above and below. A delicious, easy, and healthy meal. Crispy chicken, that’s tender and juicy on the inside.


I fry outdoors to avoid making a mess in the kitchen. Induction burner, when not the grill or fire pit.

I don’t know if the juices show up in pictures, but I tried. It probably does if you’re on a laptop or computer. I only use my phone, so I forget about that. One of these days, I’ll check this out on a laptop, which will then make me want to go all through blog and edit everything š¤Ŗ
