
Easy grilled chicken; from oven to grill makes it easy, juicy, and DONE, every time. Although I used a mojo marinade (all day) 😋. I usually make my own mojo marinade, but I bought one we like from local Mexican carniceria (a neighborhood butcher shop). I did add onion, peppercorns, and garlic to it. I adapted the cooking/grilling method from a recipe at Cook the Story, I didn’t use bbq sauce or any sauce; just took it out of marinade, seasoned, put it in the oven, then on grill until desired charring; which my daughter likes it really charred 😳 so there’s a mix. 😉 It’s delicious! I tried it again with a different marinade; still mojo, different version, below.

Served it with honey roasted carrots and roasted broccoli/cauliflower mix.
How To Grill Chicken Perfectly
Bake at 300° (I did 325°), for about an hour or when thermometer reads 165°.
