Easy BBQ Chicken

Easy chicken dinner. Yeah, it looks same as previous post 🤭 but it was a week later, both thighs and drumsticks, along with different flavor. Confession: The plan was to grill; I ran out of propane and charcoal 🫠, so the broiler it is. Marinated chicken in mojo all day first, but it’s not necessary.  Cleaned and patted dry chicken thighs and drumsticks with paper towels. Rubbed with avocado oil, Redmond Real Salt, fresh cracked black pepper, and roasted in convection oven at 425° for 25-35 minutes; dark meat is very forgiving; it will still cook longer under broiler. Then, put your favorite bbq sauce on chicken. Ours is Stubb’s Sticky Sweet 😋 Put chicken under broiler until desired charring, or browning/doneness. 🤪 🍗 The sweet potatoes (avocado oil, salt, pepper & orange blossom honey) went in oven for 25-30 minutes, and green beans (with just good salt) were put in same oven for about 15 minutes. I left a couple of pieces of chicken without bbq sauce… my son 🙄

The green beans were so good with Redmond Real Salt (I’m sure with a good salt, whether this, celtic sea salt, or Himalayan pink salt) I can snack on that in place of something like potato chips 😋
