Update or “RELOAD” ๐คญ

I’m sharing this with a recipe that uses breadcrumbs instead of oats as another alternative, depending on what you have available. Along with a couple of other differences. I don’t even follow a recipe anymore. I eyeball it ๐ง but I use ketchup instead of tomato sauce (if I have it), I pulverize onion in small food processor, no need to sautรฉ onions first, yet get all the flavor. And I never use loaf pans anymore; haven’t for years, I just form mixture into shape of meatloaf & place on sheet pan lined with either parchment paper or nonstick sprayed foil. I’ve been making them smaller due to my family downsizing ๐ but if I need more, I make 2 small loaves. I find they cook better that way, more evenly….done in the center with our desired doneness on top & sides; baked ketchup ๐ slightly browned crispy edges, yet not burned on bottom like when trying to get a large thick loaf done. Options ๐ Also, I never use 93% ground beef. Mostly, I use 85% lean, rare cases when store doesn’t have it I’ve used 80%. “Make it work,” ๐ I must say. The sheet pan I use has a slight well/indentations surrounding it, so released fat pools there instead of under meatloaf. In this latest recipe, I used Italian seasoned panko breadcrumbs. I mix the egg, breadcrumbs, a little heavy cream (because I always have it), or milk, just a splash (eyeball it for how much it’d take to get breadcrumbs moist.. to make meatloaf moist. You don’t want it too wet; it’ll have the egg, ketchup/tomato sauce, & splash of worchestershire sauce that helps with that. We personally really like ketchup in & on ours. There are some little differences you can make with that also. Like adding a little brown sugar & mustard to ketchup mixture, if that suits your tastes better. So, the basics, like measurements, temperatures, and times, are pretty universal. Some ingredients are flexible and varied, according to your preferences. Like green peppers, ๐ถ , ๐ฅ, mushrooms, corn ๐ฝ ๐ค you or your family might enjoy. Keep that in mind if you follow the recipe at this link โคต๏ธ ๐

The sweet cornbread was nice also, with some corn ๐ฝ kernels in it & crispy edges.
Speaking of corn kernels, the salad ๐ฅ had crispy dried corn, too ๐ although I cheated, by tasty choice with that part. Taylor Farms makes many nice salad kits with fresh ingredients. We like many of them. This one was the Avocado Ranch Chopped Salad kit, with avocado ๐ฅ dressing. โคต๏ธ

I did learn that I prefer a little ketchup or glaze on my meatloaf, more than the gravy. I’ll leave the gravy for the potatoes. If you haven’t already, you will figure out your preferences. ๐ฅฐ ENJOY! It’s all good๐
