🤷♀️ – Adapted from The Best Chili Recipe Ever! (Slow Cooker)

Of course, I made mine a little different. I didn’t have jalapeño, so I used guajillo pepper, ancho chile pepper, New Mexico Chile pepper (pods), & chipotle with adobo sauce. Also, chipotle chili powder & regular chili powder. And we like these chili beans that aren’t kidney beans.
A BIG difference, too, is that I seared (in bacon fat) & cooked my seasoned top round in pressure cooker first, with the seasonings & chilies. While that was cooking, I sautéed chopped onion in a little bacon fat, then garlic .. seasonings, tomatoes, etc. After meat was done, I added it to the pan. Then, strained liquid from PC into pan. I know, quite a difference, but this recipe was closest to how I made chili this time.
Usually, it’s either classic chili or Texas No-Bean Chili. This mixes that up.
I will say, I prefer the classic ground beef chili, but my kids really liked this one. My son went for a second bowl. I got it SO SPICY 🌶🔥 that I put only a little bit on one side of a baked potato 🥵 and even that, I added sour cream.
I enjoyed my baked potato though 😋 with Rodolphe Le Meunier butter 🧈 (I cut my cows head off 😱 the embossed cow on my butter 🐄) 😆
I posted because someone else might have a big chunk of beef & feel like chili, too.
