Chorizo breakfast burritos 🌯 😋

No recipe is necessary. Ingredients can vary. For instance; I wanted to add green chilies and jalapeño, but “somebody” evidently ate that 🤣 (granddaughter 😍). “I” only add the sweet little red peppers because I love them; typically, it’d be a spicy pepper. I sautéed onion, added chorizo, break it up as you would with any ground meat and cook on medium/med-high. While that’s cooking, I started hashbrowns (you could get that made first), added a couple of cloves of minced garlic to chorizo, stir. I added the red pepper & green onion to chorizo also. While that’s cooking, mix eggs (depending on how many you’re making, I used 6 eggs, made 6 burritos), cream (about 1/4 cup), salt & pepper in bowl, whisk. Check and flip hashbrowns. When chorizo is done, turn heat down, pour in eggs, and fold/stir until eggs are done. Turn off burner, including hashbrowns. Sometimes we cook eggs, potatoes (option/we don’t always have potatoes) & chorizo separately & layer it on tortilla, but often, like this time, we mix eggs & chorizo together; take a large flour tortilla, put a couple spoons hashbrowns in a line (see below; closer to you from center, to give enough tortilla to fold/roll 🤭 up. Then add chorizo egg mix layer, then your favorite shredded cheese 🧀 😋 and roll over, folding ends over after first fold, then roll rest of the way.
